Rye flour makes a darker, nuttier-tasling loaf, but as it has no gluten content it will not rise. Use a little to give flavour to other loaves.


For this loaf, substitute 75 g/3 oz/¾ cup of the wholewheat flour with the same amount of rye flour and then proceed as for the basic loaf.
