This is the most flavoursome member of the squash family, but it has a tendency to be watery. To offset this, serve it with a sauce or top with a mixture of Quark or puréed cottage cheese and sour cream.


Make a hole in the top of the vegetable and simmer in boiling salted water for about 40 minutes. Remove and slice in two. The seeds have a pleasant flavour when soft, but discard them if they are still hard. Then remove the strands of flesh and mix with butter, salt and pepper, or serve with a sauce such as salsa romesco.
