These are the Indian version of tempura. The batter is made from gram/chick pea flour and spices, and may be used in the same way and with the same vegetables as tempura.

Ingredients

  • 175 g/6 oz/1Β½ cups gram/chick pea flour
  • Β½ teaspoon each salt, baking powder, turmeric, cumin, coriander and black pepper
  • 300 ml/10 fl oz/1ΒΌ cups iced water

    Method

    Mix the dry ingredients together, ensuring there are no lumps in the flour. Gradually add the water to form a paste and then a batter, beating continuously with a fork.
