An easy pâté to make, and a delicious one when eaten with wholewheat toast or oatmeal biscuits/crackers. It is the nearest thing I have made to that millstone around the vegetarian’s neck, the nut loaf, but I must admit this is particularly good.


  • 2 tablespoons olive oil
  • 450 g/1 lb mushrooms, finely sliced
  • 2 onions, chopped
  • 2 garlic cloves, crushed
  • 100 g/4 oz/1 scant cup walnuts
  • 2 eggs, hard-boiled and finely mashed seasoning to taste


    Heat the oil and cook the mushrooms, onion and garlic until soft. Blend to a rough purée. Pour into a mixing bowl and add the rest of the ingredients. Press down in a dish and refrigerate for a few hours. Garnish with watercress.
