Butter shaped into balls or curls makes any meal seem more festive. This particular variety is delicious served with brioches.


  • 225 g/8 oz/1 cup butter, slightly salted
  • juice of 1 large orange
  • finely grated rind of 1 large orange
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground mixed/apple pie spice
  • 2 teaspoons light brown sugar or honey


    Blend all the ingredients together, then pack the mixture tightly into a container, cover and chill thoroughly. Shape the butter into balls using a small ball scoop. If you wish, the balls may be rolled in grated orange rind and sprinkled with cinnamon.
