Onions can sometimes taste powerfully sweet after cooking, so use a sharp-flavoured stuffing to offset this. Serve with a winter salad of chopped cabbage, carrots, apple and celery.

Ingredients

  • 4 large onions
  • 2 tablespoons olive oil
  • 2 medium sized carrots, grated

Method

Trim and peel the onions and remove the centres, leaving a shell about 1 cm/¼ inch thick. Chop up the removed onion then gently simmer the onion shells in some salted water for 3 minutes. Drain carefully.
