This is a famous dish which can be bought ready cooked as a snack from Egyptian street stalls. It is equivalent to the hamburger in its ubiquity. Traditionally it is eaten as a first course, but it goes well with Oeufs Florentines, and cabbage or leek dishes.


  • 225 g/8 oz/1 cup ful medames/brown beans, pre-soaked
  • 4 hard-boiled eggs
  • 3 garlic cloves, crushed
  • 8 tablespoons olive oil
  • generous handful parsley, finely chopped
  • juice of 2 lemons seasoning to taste


    Drain the beans well and cook in plenty of boiling water for lΒ½ hours, or until tender. Drain well. Peel and mash the eggs, and stir into the beans with the rest of the ingredients. Serve warm.
