This is a famous dish which can be bought ready cooked as a snack from Egyptian street stalls. It is equivalent to the hamburger in its ubiquity. Traditionally it is eaten as a first course, but it goes well with Oeufs Florentines, and cabbage or leek dishes.
Drain the beans well and cook in plenty of boiling water for l½ hours, or until tender. Drain well. Peel and mash the eggs, and stir into the beans with the rest of the ingredients. Serve warm.
