  • 150 g/5 oz/β…” cup mung beans
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • 2 teaspoons garam masala
  • juice and zest from 1 lime
  • 300 ml/10 fl oz/lΒΌ cups vegetable stock seasoning to taste
  • 2 tablespoons coriander leaves, finely chopped


    Recipes for spiced bean dishes are legion. You can use any sort of bean and any mix of spices. Finding one you like is a matter of trial and error. This is one of my favourites. Eat it with potato and mint tart and a fruit salad.
