As buckwheat is such a lightweight cereal, these croquettes are particularly good. If, in the past, you have found nut mixtures stodgy, try these and surprise yourself. This recipe makes five handsome-size croquettes, enough to feed 4 people as a light lunch. Double the amounts if more are needed. Serve with tomato and malt whisky sauce, or salsa romesco.

Ingredients

  • 225 g/8 oz/2 cups cooked buckwheat
  • 100 g/4 oz/1 generous cup broken walnuts
  • 4 garlic cloves, crushed
  • 2 teaspoons oregano
  • 1 egg, beaten seasoning to taste
  • wholewheat breadcrumbs, toasted
  • corn or sunflower oil for frying

Method

Mix the first six ingredients together thoroughly. Fashion into croquettes and roll in the breadcrumbs. Refrigerate for about 30 minutes, then fry in a little oil over a medium heat until crisp and golden.
