Cook the rice. Meanwhile, trim, clean and slice the mushrooms. Heat the butter and oil and fry the shallots until soft. Raise the heat and add the mushrooms, stirring constantly for a few minutes. Add the soy sauce. Remove from the heat, stir in the tarragon and season.
