If you want to arouse the palate and please the eye, this is the perfect dish. Serve it at a special dinner party with a crisp green salad.

Ingredients

  • 225 g/8 oz/ cups wild rice

Method

Cook the rice. Meanwhile, trim, clean and slice the mushrooms. Heat the butter and oil and fry the shallots until soft. Raise the heat and add the mushrooms, stirring constantly for a few minutes. Add the soy sauce. Remove from the heat, stir in the tarragon and season.
