This recipe makes 8 light, English-style pancakes (about 15 cm/6 inches in diameter) which arc perfect for stuffing. If you want to use a sweet filling, add 1 teaspoonful of sugar or honey to the batter. For added richness and a thicker pancake you can use another egg, 1 teaspoonful of baking powder, and 1 tablespoon of powdered skimmed milk.
