Do remember that avocado can be heated but not cooked. If you want to make this filling in advance, do not add the avocado until the last few moments.


  • 50 g/2 oz/4 tablespoons butter
  • 2 garlic cloves, crushed
  • 1 green pepper, cored, seeded and sliced
  • 1 small onion, sliced
  • 1 ripe avocado, peeled, stoned and diced
  • 150 ml/5 fl oz/⅔ cup sour cream
  • 3 tablespoons parsley, finely chopped seasoning to taste


    Melt the butter in a pan, add the garlic and then the pepper and onion. Cook over a low heat for about 10 minutes, or until just soft. Pour into a bowl and add the avocado with the rest of the ingredients. Mix thoroughly.
