Method

Substitute the central stalks of 1 head of celery and 225 g/½ lb baby courgettes/zucchini for the cucumber and mint.

Grate the courgettes/zucchini into a bowl and slice the celery very finely. Mix well with the rest of the ingredients and pile into the pastry case. Garnish with parsley.
