Method

Substitute the leeks, peppercorns and butter with 225 g/½ lb mushrooms, 1 red pepper, cored, and 3 tablespoons olive oil.

Slice the mushrooms and pepper thinly and fry slowly in the oil for about 8 minutes. Leave to cool, then mix with the cream and seasoning, and bake as before.
