Substitute 2 or 3 leeks and 75 g/3 oz Feta cheese for the green pepper, onion, garlic and parsley.

Wash and trim the leeks, then slice into thin rings. Season and cook in the melted butter until just soft. Crumble in the Feta, stir well and cook for half a minute, until the cheese just starts to become runny. Pour into a bowl, add the avocado and sour cream, and mix thoroughly. (As Feta is highly salted, you may not wish to add any extra salt.)
