This is one of the best and simplest purées, which is why I kept it until last. I use it a lot and to accompany other dishes, such as pâtés and terrines.


  • 2 ripe avocados
  • 1 tablespoon juice and zest from 1 lime
  • 1 garlic clove, crushed
  • 225 g/8 oz/1 cup Greek yoghurt seasoning to taste


Scoop the flesh out of the avocados and place in a blender with the rest of the ingredients. Purée until smooth.
