Delicately flavoured with celery, this amber-coloured pickle is delicious with Brie and Camembert. Store for three months before eating.


  • 1 medium size pumpkin
  • 225 g/½ lb honey
  • 600 ml/1 pint/2½ cups cider vinegar
  • 2 tablespoons celery seed
  • 1 tablespoon each celery salt and sea salt


    Extract the flesh from the pumpkin and discard the seeds. Chop up coarsely and place in a pan with the rest of the ingredients. Bring to the boil and simmer for 20 minutes. Cool, bottle and seal.
