Use green or brown lentils in this recipe; they have a lovely, nutty flavour, and go particularly well with the slightly sweet taste of caramelized onions.


  • 450 g/1 lb/2 cups lentils, soaked for 1 hour and rinsed
  • 225 g/8 oz/ cups long grain rice seasoning to taste
  • 675 g/ lb onions, halved and thinly sliced
  • 150 ml/5 fl oz/ cup olive oil


    Bring the lentils to the boil in about 900 ml pints/ cups water. Simmer until nearly tender. Add the rice and seasoning, and cook covered for about 15 minutes until the rice is done, adding more water if necessary. Fry the onion in a little of the oil until practically caramelized. Stir this into the rice and add the rest of the oil.
