Use green or brown lentils in this recipe; they have a lovely, nutty flavour, and go particularly well with the slightly sweet taste of caramelized onions.
450g/1lb/2cupslentils, soaked for 1 hour and rinsed
225g/8oz/1¼cupslong grain rice seasoning to taste
675g/1½lbonions, halved and thinly sliced
150ml/5fl oz/⅔cupolive oil
Bring the lentils to the boil in about 900ml1½pints/3¾cups water. Simmer until nearly tender. Add the rice and seasoning, and cook covered for about 15 minutes until the rice is done, adding more water if necessary. Fry the onion in a little of the oil until practically caramelized. Stir this into the rice and add the rest of the oil.
