In the spring blood oranges aren’t as sweet as they are later in the season, when they can be served alone. For this reason I have mixed them with early strawberries to make a delicious maroon compote. It is important to add the strawberries at the very last minute to preserve their texture.
Cut the zest in very thin slivers from 2 of the oranges. Place in a saucepan, cover with the water and champagne and bring to the boil. Remove from the heat, and steep for 15 minutes. Add the sugar then bring the mixture to the boil. Simmer for 20-30 minutes, or until a thin syrup forms. Cool and add brandy to taste. Chill the strawberries.
