Ingredients: 2 tablespoons orange zest, grated; 3 large Comice pears, peeled, cored and thinly sliced; 150 g/5 oz/scant ½ cup mild-flavoured honey; 450 g/1 lb cranberries, picked over; 3 tablespoons cornflour/cornstarch; 3 tablespoons cornflour/cornstarch; 1 sweet pastry case, baked blind; 175 ml/6 fl oz/¾ cup fresh orange juice; 2 tablespoons lemon juice; 2 tablespoons apricot jam

About

Thanksgiving wouldn’t be Thanksgiving without cranberries, and in this menu I’ve worked them into the dessert. This tarte is as beautiful to look at as it is to eat. Use a shallow 30-cm/12-inch tarte pan.
