This is a particularly startling combination of hot and cold that is exciting to look at and to eat. Use the ice cream recipe, adding 1 teaspoon of vanilla essence/extract instead of the ginger syrup.


  • 1 sponge flan case
  • 1 pint vanilla ice cream
  • 4 eggs, separated
  • 225 g/8 oz/1 generous cup castor/superfine sugar


    Pre-heat the oven to 220°C/425°F/Gas mark 7. Whisk the egg whites until stiff (using the yolks in the ice cream). Fold in the sugar a tablespoon at a time. Generously fill the flan case with ice cream and heap the meringue on top. Bake for only a few minutes - until the meringue is golden brown. Serve immediately.
