This is a dish of melted cheese, traditionally eaten by scooping it up with cubes of bread or toast. The Swiss also drink hot tea while eating fondu as they maintain the hot liquid prevents the cheese coagulating in the stomach and becoming indigestible.

Method

Make a sauce from the butter, flour and milk. Add the cream, seasoning and cheeses. Stir until smooth. Remove from the heat and beat in the egg yolks. Eat while still hot.
