Here I was inspired by an Indian homemade cheese stuffing. The cheese is the Indian paneer, and the filling of paneer and green chillies I learned to make in New Delhi ten years ago was intended to stuff fresh morels, which in turn were destined to be cooked in that great Indian festive dish, a biryani. I was deeply impressed by the combination of soft cheese and chillies, which is unexpectedly delicious; so is this new recipe of mine.
