These are the traditional ‘spring rolls’ of Vietnam, cha gio tom. They are another example of snacks that are good to eat wrapped in a lettuce leaf with a few mint leaves, then dipped in nuoc cham (fish sauce with chillies and grated carrots). However, the filling has plenty of flavour and the rolls can be served as canapés without lettuce leaves or dipping sauce. Vietnamese rice paper (banh trang) is trickier to handle than the Chinese spring roll wrappers that can be found in the freezers
