For the batter; anything actually labelled ‘rice flour’ is almost certainly too coarse; it is essential to use the finest ‘rice powder’ from an Oriental food shop. Buy small squid that can be cut into rings. The batter has a good flavour already; and a dipping sauce is really not necessary; unless you want a hot chilli sauce.
