Butternut squash are so easy to get now and I have become so accustomed to cooking with them that I adapt any Asian pumpkin recipe to suit this good-tasting yellow American cousin. All Asians love tuna, which at the time of writing happens to be a fashion favourite, widely available as fresh tuna steaks.
