Making satays and barbecuing them out of doors is such fun that I felt I had to create some satays for vegetarian friends. I find root vegetables easy to prepare, and they go well with Peanut Sauce, Soy Sauce with Chillies or Coconut Sambal. Here I’ve also added chunks of slightly unripe plantain, which is not a root vegetable, of course, but is delicious, especially with coconut.
