The best grilled stuffed fish I’ve ever eaten was in West Java, where they have delicious milkfish that they call bandeng. The Laotians have excellent barbecued flat fish that reminded me very much of Indonesian and Malaysian styles of cooking. The important thing is that the fish must be fresh, and in England I can only get milkfish that’s been frozen. So I use fresh sardines.
