I’ve chosen this because of the unusual sauce that accompanies it – what Jereme calls ‘an Oriental preserved vegetable sauce’. This dish is a very good example of reciprocal fusion. He served it at Jiang-Nan Chun, the best Chinese restaurant in Singapore, with some excellent mashed potatoes richly laced with herbs.
