This makes a delicious one-pot lunch or supper. If you go to Chinatown for the sausage, you will find several different kinds; the one you want is quite short. A Chinese friend told me to ask for Chinese salami. When I’m shopping elsewhere, I simply buy chorizo as an alternative. This dish would normally be made with chewy dried Chinese black fungus, but I prefer instead to use tasty chestnut mushrooms.
