Tofu is an excellent source of protein for vegetarians, so really strict vegetarians can replace the crabmeat with wild asparagus or Thai baby asparagus. If you do use crabmeat, it must be only the best and the freshest. Failing that, use finely chopped raw prawns.

Ingredients

  • 225 g/ 8 oz crabmeat, white meat only
  • white of 1 egg

Method

In a glass bowl, combine the crabmeat with the egg white, ginger, garlic, cayenne pepper, sesame oil and a pinch of salt.
