For these, the meat needs to be sufficiently thick and wide for a pocket to be cut in one side of it to take the pineapple stuffing. A short wooden skewer is enough to close the opening. This is an excellent dish to make for a large party; it is quite easy to prepare and can be left in the oven for up to 3 hours. You can put it in long before your guests arrive, and know that it will be beautifully cooked just at the right time to be served as the main course.
