The word ‘sambal’occurs in many parts of Southeast Asia, and generally means some kind of chilli sauce or a relish of crushed chillies. A sambal goreng is a stew or curry that contains a sambal and spice mixture cooked with coconut milk. To completely identify the dish, all you then have to give is the name of the principal ingredient: for example, sambal goreng udang is prawn sambal. Beef and chicken sambals are popular, and a hard-boiled egg sambal is a good old family stand-by.
