Fried Prawns in Red Curry Sauce

If you are travelling in Southeast Asia, this is a prawn dish that you will encounter everywhere, in one form or another. Prawns are plentiful and cheap in those parts, and everyone knows that there are countless variations on curry. Local people buy this, ready-cooked, from street vendors and takeaways (invented in Asia long ago) or they make it at home. There the cook is usually a ‘helper’ or a member of the family who is accustomed, or expected, to get up early in the morning and prepare
