Laksa paste, like the curry pastes, can be made well in advance and stored in the fridge for up to 7 days. It can be frozen in an ice-cube tray or small self-sealing plastic freezer bags. Its a good idea to label these clearly and indelibly, and to write the date on them – especially if you are storing a collection of pastes in your freezer. More or less a variation on the Sambal Goreng earlier, laksa paste is usually used for laksa soupy stews and other seafood dishes.
