The basis of this is the Black Glutinous Rice Porridge. You can make the porridge into a sorbet by simply adding 2 tablespoonfuls of glucose to the mix and then churning it in a sorbetière. To make it into a deliciously creamy ice-cream is scarcely any more difficult.
