Place the cut portion of the cheese against the heat of a raclette grill or before any upright hot grill, whether charcoal, gas or electric. Turn the cheese two or three times to prevent the melted cheese from dripping. When the cheese is at the bubbling stage, scrape it with a knife onto a hot plate. This is one serving.
