  • 3 cucumbers
  • teaspoons salt
  • ¼ teaspoon freshly ground black pepper
  • ¾ cup shredded sharp American cheese
  • 2 tablespoons butter
  • ¾ cup soft fresh bread crumbs

    Method

    1. Preheat oven to moderate (350°F.).

    2. Wash the cucumbers and cut into one-quarter-inch slices. Place them in a saucepan with one inch of boiling water containing one-half teaspoon of the salt. Cover and simmer for three minutes. Drain.

    3. Place the cucumbers in a casserole (10 × 6 × 2 inches). Sprinkle with the remaining salt, the pepper and cheese. Toss lightly.

    4. Melt the butter and mix it with the bread crumbs; sprinkle over the top of the cucumbers. Bake for about thirty-five minutes, until the crumbs are brown.
