This all-American classic was invented by Kellogg’s® and is usually made using Rice Krispies® and industrial marshmallows. Making them with home-made marshmallows and organic puffed rice are two ways to improve on the original.

Preparation time: 10 minutes, plus cooling
Cooking time: 5 minutes


  • 70 g ( oz) unsalted butter
  • 600 g (1 lb 5 oz) marshmallow
  • 2 pinches salt
  • 350 g (12 oz) puffed rice (Rice Krispies®, Rice Bubbles® or other)


The Mixture

Oil or butter a square 24 cm ( inch) cake tin. Melt the butter, marshmallow and salt in a pan over low heat. Be careful not to overcook the mixture; stop the cooking as soon as the butter and marshmallow have melted. Mix the melted marshmallow and butter with the puffed rice in a large bowl.

Setting and Serving

Using a spatula, transfer everything to the tin, pressing just enough to get the mixture well distributed but being careful not to crush the puffed rice. Allow to cool and cut into squares.
