The classic New York breakfast sandwich as sold at fine establishments like Murray’s Sturgeon Shop on the Upper West Side of Manhattan. Nothing can beat it!
Slice the bagels in half horizontally. You can toast them if you want to, but normally, if they are fresh, it’s not worth the trouble. Spread both halves with a thick layer of cream cheese and, on the bottom half, add in order: smoked salmon, one slice white onion, if using, and two or three thin slices of tomato. Top with the other half of the bagel and cut in two before serving.
