These are sunny-side up eggs that are briefly flipped over.
Heat the butter or olive oil, or a combination of the two, over medium heat in a (truly) non-stick frying pan. When the butter or olive oil starts to sizzle, carefully crack the eggs into the frying pan. After a couple of minutes, use a wide, thin, clean spatula to make sure that the eggs are completely unstuck from the bottom of the frying pan, gently sliding it under the eggs to loosen any sticky spots. Now tilt the pan to slide an egg onto the spatula (jiggling the spatula forward if necessary) and then gently flip the egg over at the edge of the frying pan (don’t drop it!). Repeat with the other egg. After 20 seconds or so, tilt the pan to slide the eggs onto the edge of a plate. Season. If you practise enough, making eggs this way will eventually come naturally. Along the way, you can consider eggs over easy as an exercise in gentleness.
