  • 1 large banana, not too ripe
  • 40 g ( oz/¼ cup) peanuts, coarsely chopped
  • 1 teaspoon fine sea salt


The Brownie Dough

Make the brownie dough by following the instructions.

Assembly and Cooking

Preheat the oven to 180°C (350°F/Gas 4). Butter and flour 12 individual silicon moulds approximately 6 cm ( inches) in diameter and 4 cm ( inches) high. Fill the moulds with the batter to the top. With a wet hand, flatten and smooth the surface. Cut the banana into slices 5 mm (¼ inch) thick and insert a round into the batter in the middle of each muffin. Sprinkle the top of the mini muffins with the crushed peanuts, then the fine sea salt. Bake for about 20 minutes; the top of the mini muffins becomes solid to the touch and the inside is melting. Allow to cool for at least 30 minutes before serving.
