Halve the avocados, remove the stones and transfer the avocado flesh to a bowl. Immediately juice the lemon and combine the lemon juice and olive oil with the avocados. This is most easily done by mashing everything together with a fork.
Peel the garlic and shallots. Mince the garlic and finely dice the shallots. Rinse the parsley, shake off excess water and finely chop the leaves. Combine the garlic, shallots and parsley with the avocado mixture and season the guacamole with a little sea salt, pepper and chilli flakes.
