Trim and peel the pumpkin, remove the seeds and finely dice the flesh. Peel and finely dice the onion. Wash and deseed the chilli and also chop finely.
Heat the olive oil in a wide saucepan and sweat the diced pumpkin, onion and chilli for a few minutes over medium heat. Season with sugar, sea salt and pepper and deglaze with the white wine. Cover and simmer for 10 minutes, then remove the lid and continue to simmer for another 5–10 minutes to reduce, stirring occasionally. Stir in the vinegar and butter and season the relish once more to taste.
