One of the most interesting sushi I ate when I first visited Peru was maki acevichado – a classic of Nikkei cooking there. The Nikkei leche de tigre is a delicious addition to the sushi rice, and the cream cheese (a contentious ingredient for many sushi purists) works very well in this eclectic combination. There is a different version of maki acevichado in nearly every restaurant in Peru – Japanese, Nikkei or otherwise.
