If you are looking for a dish for a special occasion, then look no further – this is it! The lobster and saffron add a touch of luxury, although I find that crab (which is less than half the price) works really well, too. You will need a little time to make the lobster stock in which the rice is cooked, so plan ahead and start it a day in advance of when you’d like to serve it. I like to serve it with nothing more than a glass of chilled Champers!
