Nikkei chef Diego Oka was born and raised in Lima, Peru, and his cooking draws influences ranging from his Japanese grandmother’s cooking to his personal experiences and the food he discovered while living in Mexico and Colombia. He worked for many years with celebrated Peruvian chef Gastón Acurio, at his restaurant Astrid & Gaston in Lima.
