  • About

Persimmon is a native fruit of Japan and was introduced by Nikkei farmers to Brazil, where it is known by its Japanese name kaki. We love persimmon in Brazil, and it grows abundantly to give very sweet fruit. I remember my father used to cure the fruit in vats of sake for the grown-ups to enjoy as an after-dinner treat. I used to look on with envy!

This salad combines a selection of raw root vegetables and persimmon to create a multicoloured and textured dish that will taste delicio
