What do you get when you cross bean soup and polenta? A meal in a bowl, a favorite of people in the Lunigiana area, where this substantial and filling dish fills stomachs and soothes souls on a cold winter’s day. A perfect after-ski meal to eat sitting around the fireplace, polenta incatenata, or “polenta unleashed,” is made with polenta cooking right in the pot in which the beans and kale are slowly bubbling. They all simmer together into a lovely creamy mixture.
