Pronounced n-cheep, n-chop, this wonderful dish probably gets its name from the sound of the knife chopping up the chicken. It is a brilliant way to use leftovers. Morena Spinelli, who grew up in a family of ten, takes whatever she has on hand—some meat, a poached chicken, even some of both—and turns them into a dish that disappears in a flash.
